CRANBERRY ORANGE RELISH

(Helen's modification of the recipe on the Oceanspray website)

1 12-ounce package fresh cranberries, rinsed and drained
1 unpeeled orange, preferrably seedless
1/3 - 1/2 cup sugar, or taste

 

Rinse off the unpeeled orange and zest the whole thing. Then mince the zest. Peel the pith off the orange and segment. Remove any pits from your orange segments. Put the orange zest, orange slices, and cranberries into a food processer and start processing. Slowly add sugar to taste. Process until it attains a nice, relishy, small-chunks-chunky texture. Store in refrigerator. Can also be frozen.
