FINNISH GRATED TURNIP AND APPLE SALAD

(Sundays at Moosewood)

1 cup peeled and grated raw turnip or rutabaga (about 2 medium turnips or 1/4 rutabaga)
1 cup peeled and grated tart green apple
1/2 cup chopped fresh parsley
juice of 1 large lemon
1 Tablespoon vegetable oil
salt and freshly ground black pepper to taste

 

Combine everything in a bowl, toss, cover, and chill.
