2 1/2 cups flour (I like a mix of whole wheat and unbleached, but it's your call)
1 teaspoon baking powder
1 teaspoon baking soda
dash salt
5 Tablespoons fresh grated ginger
3/4 cup maple syrup, or to taste (I like a little less)
1/4 cup molasses
1/4 cup oil
Preheat oven to 325º.
Mix the flour, baking powder, baking soda, and salt together in a bowl. In another bowl, mix together the ginger, maple syrup, molasses, and oil. Add the wet stuff to the dry stuff and stir together, but don't overmix.
Bake at 325º for about 12 minutes; no need to grease the sheet. These are a bit tricky when it comes to baking, since they won't brown or do anything obvious when they are done, and they don't taste too good burnt. So just be vigilant.
