GRILLED LEEKS

(The Flavor of California)

This recipe is actually for Grilled Scallions, but Gene's always made it with leeks.

6 baby leeks, white parts, cleaned and cut into halves lengthwise
4 Tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon lemon juice or balsamic vinegar
2 teaspoons chopped fresh thyme
1/4 teaspoon salt
1/2 teaspoon black pepper

 

Combine leeks with all the other ingredients and let marinate for at least one hour. When ready to cook, remove leeks, reserving the remaining marinade.

Grill leeks quickly, about 5-8 minutes on each side. You can also cook them in a very hot ungreased frying pan, browning them for about 2-3 minutes depending on how big and mature the vegetables are.

Toss in the reserved marinade with leek pieces and serve.

You can also add a few green garlic shoots to the baby leeks when you prepare this. To make this with scallions, substitue 12 or so scallions for the leeks.
