SULTAN'S KITCHEN'S HUMMUS

Located in the Financial District of Boston, Sultan's Kitchen is a great, deli-type establishment serving authentic Turkish food. They've issued a cookbook of their own which included the recipe for their deliciously garlicky hummus. This is our modification of that recipe using canned chickpeas insead of dry, 'cause we're lazy.

3 cans chickpeas, drain but save the liquid
6 cloves garlic, chopped
1 cup lemon juice
1/2 cup olive oil
salt to taste
1/2 cup tahini

 

Process in a food processor the chickpeas, garlic, lemon juice, olive oil. As it blends, add the canned chickpea liquid one tablespoon at a time, until the consistency is how you like. Season with salt if desired.

Transfer the mixture to a bowl and stir in the tahini to make a smooth paste.
