MOCK CHOPPED LIVER

(from Lowfat Jewish Vegetarian Cookbook)

1/2 lb. green beans, chopped into bite-sized pieces
3/4 lb. mushrooms, chopped
1 small onion, finely chopped
1 teaspoon oil
1/4 cup walnuts (or cashews)
salt and black pepper to taste
1/4 cup water

 

Sauté, mushrooms, and onion in oil over medium-high heat for 10 minutes. Pour mixture into food processor, add remaining ingredients, and blend until creamy. Chill before serving.

6 servings at 1 POINT per serving: 67 calories, 4g total fat, 2.8g dietary fiber
