Cut tofu into large, bite-sized cubes and place in bowl. Blend remaining ingredients. Pour over the tofu, making sure the tofu is covered as much as possible. Allow to marinate for at least 1 hour, preferably more.
Preheat oven to 375°. Remove tofu from marinade and place in a small casserole dish along with 1/2 cup of marinade. Bake, uncovered, for about 1 hour, gently stirring and basting with marinade every 20 minutes. Serve over brown rice.
