I'm making the switch to a standards-compliant website! Check out the new version of the Reziparium. It's still in beta, a bunch of the recipes haven't been converted yet, and the nav isn't fixed, but you can get an eyeful of the visual direction the Reziparium is moving towards, and the recipes that are posted are all right. Please send me any feedback about the new direction at all.

I have a secret tip to impart to all you vegans and other non-egg-using folk. If you bake with Ener-G Foods' product Egg Replacer (which is mostly potato starch) but find the results less than satisfying, Michael Greger taught us this trick. Mix the Egg Replacer and water as directed on the box, then (here's the trick) beat it vigorously - fast and furious - until it's frothy and foamy. This takes a few minutes of beating it with a fork in the bowl, but noticably improves your vegan baked goods.

My other tip is for folks trying to reduce the fat in their cooking. If you choose to reduce the amount of oil you fry/sauté with from what the recipe calls for, usually that's fine but you have to keep a closer eye on the food. I usually turn down the heat a notch or two from the setting I would use on a generously oiled pan, stir more frequently, and keep a small cup of water nearby to splash small amounts in if things start sticking to the pan. Using nonstick skillets would probably be a big help, but I don't own any. Also, use the smallest skillet/frying pan that will fit so the oil doesn't get spread too thin.

133 recipes are on here at the moment.

All the recipes here are vegan or easily veganizable. Nem eszik olyan forrón a kását, as the Hungarians say. Enjoy.

NEW!

Vegan Cornbread
Gene veganized a classic cornbread recipe and it came out great. For an extra kick, be sure to try the chipotle cornbread variation. (WW)

Vegan Key Lime Pie
If I haven't convinced you yet to get a citrus zester, this creamy, sweet, and limey pie might do the trick. (WW)

Savory Squash Stew
Thick and savory indeed, perfect for late fall. It felt odd putting mustard, vinegar, and cinnamon into a squash stew but the flavors melded well. (WW)

Gingersnap Cookies
Julia brought these soft (and vegan) gingersnaps to our PreThanksgiving Feast where they were a big hit. She has graciously shared the recipe with us here.

CONDIMENTS & SALSAS

Beak of the Rooster Salsa
A basic salsa.

Black Bean & Papaya Salsa
A fun, party salsa. (Confession: I don't like papayas and always substitute other, better fruits. The beauty of salsas is that this practically always works. We used kiwis the time I made this.)

Black Bean Dip

Smoky Black Bean Dip
This one's got a kick to it - it's sort of mid-point between a salsa and and a dip. Check Mexican food markets for canned chipotles in adobo sauce; there is really no substitute for their delicious smoky-flavored heat.

Black Bean Salsa

Black Olive Tapenade
A strongly flavored spread that makes a nice appetizer for olive-lovers when served with toasted baguettes or crostinis. (WW)

Charred Tomato Table Salsa

Coarse-Grain Apricot Mustard
Making your own mustard is surprisingly fun & simple.

Cranberry Orange Relish
Not just for Thanksgiving! Another recipe you'll need a citrus zester for. Incidentally, Now and Zen makes a vegan turkey out of seitan called UnTurkey which I think is much better than Tofurkey, and this pairs very well with it.

Fried Onion Ginger Chutney
An unusual condiment.

Grilled Jalapeño Salsa
When you need to do something with 10 jalapeños at once.

Guacamole

Sultan's Kitchen Hummus
A garlicky hummus, from Boston's excellent Turkish restaurant, Sultan's Kitchen.

Hebrew University Hummus
Roasted cumin seeds add interest to this hummus.

Moosewood Hummus
A basic hummus.

Papaya Salsa
Another fun, fruity salsa. (I had the opportunity to try papayas for the first time in a long while, and I don't like them. I'm pretty sure the first time I made this I used a cantaloupe which worked very well.)

Parsley Dressing
This is great over baked potatoes.

Raspberry Salsa
Hot, tart & fruity - just like some of my favorite people.

Roasted Habanero Salsa
Hot. Really hot.

Puerto Escondido Salsa Roja de la Mesa
Essential. A great, basic tomato-based salsa.

Gene's Spiedie Sauce
Spiedies are a Binghamton, NY specialty.

Tomatillo Salsa
Your basic salsa verde (green salsa).
