SMOKY BLACK BEAN DIP

(modified from Vegetarian Planet)

1 15-oz. can black beans
3 Tablespoons chopped fresh cilantro
1/2 cup chopped onion
2 large cloves garlic
1 Tablespoon chipotles in adobo sauce, chopped
2 Tablespoons lime juice (about 1 lime)
salt and freshly ground black pepper to taste
optional garnish: 1/4 cup toasted, unsalted, hulled pumpkin seeds

 

Pour the black beans into a colander and rinse and drain. Place them in a bowl and mash them well, or place them in a food processor and process them to a mashed consistency and return the mash to a bowl.

Put the cilantro, onion, garlic, and chipotles into a food processor and pulse until the chopped vegetables are minced. Then add the lime juice, and salt and pepper (and more chipotle adobo sauce if increased heat is desired) and run the machine for about 5 seconds straight until the mixture is fairly smooth.

Stir this mixture well into the mashed black beans, and garnish with toasted pumpkin seeds.
