SZECHWAN GREEN BEANS

(from Still Life With Menu)

4 Tablespoons dark sesame oil (hot sesame oil could also be nice)
2 lbs. fresh green beans, trimmed
8 cloves garlic, minced
1/2 teaspoon salt
crushed red pepper to taste

 

Place a medium-large wok or deep heavy skillet over medium-high heat. Wait about a minute then add the oil. Let oil heat up, then add the green beans. Turn the heat up to high and stir fry for about 5 minutes, or until beans are well-seared. Add garlic, salt, and red pepper. Stir fry for another few minutes until everything's warmed and just done.
