BLACK OLIVE TAPENADE

(Mediterranean Vegan Kitchen)

1 1/3 cups good quality pitted black olives, such as kalamata, Nicoise, or Gaeta
1/4 cup drained capers
2 Tablespoons extra-virgin olive oil
2 large cloves garlic, chopped
1 teaspoon Dijon mustard
1/2 teaspoon herbes de Provence or dried rosemary
freshly ground black pepper to taste

 

Place all the ingredients in a blender or food processor. Blend until it becomes a coarse paste. Serve at room temperature with crackers or toasted slices of baguette.

Serving equals approx. 1/4 cup without bread at 5 POINTS per serving: 183 calories, 19g total fat, 0g dietary fiber
