1 1/2 cups cooked Great Northern beans (or a 15-oz. can)
1 Tablespoon Dijon mustard
1 clove garlic, crushed
2 Tablespoons fresh lemon juice
1/4 cup olive oil
salt to taste
1/8 teaspoon white pepper
2 Tablespoons capers, well drained, plus a few for garnish
2 Tablespoons finely chopped parsley

Place beans in blender/food processor along with mustard, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy. Pour bean mixture into a bowl and stir in with capers and parsley. Garnish with paprika and a few more capers.
This makes an elegant appetizer/hors d'oeuvre with crispy breadsticks or crackers.
